The beans come from Waslala, which is located in the Unesco Biosphere Bosawás in Nicaragua. The cocoa is characterized by deep earthy notes with hints of nuts and grasses. The bar melts easily, releasing these flavors quickly.
SAASE is called it in Spanish: sin azúcares añadidos sin edulcorantes, or no added sugars no sweeteners. There is agave fiber in the chocolate. But what is that?
Something may be called sugar-free if it has less than 0.5 grams of sugar per 100 grams. But chocolate - and many other products - have natural sugars anyway. And what is agave fiber? Blanxart solves this by printing 0% twice on the packaging.
The Unesco Bosawás biosphere is the largest contiguous tropical rainforest in the Americas except for the Amazon rainforest. It includes several national parks and reserves, totaling 15% of Nicaragua. The name is an acronym composed of the Bocay River (BO), Cerro Saslaya National Park (SA) and Waspuk River (WAS). The cocoa for this bar comes from the municipality of Waslala, which is in the biosphere and includes the town and a large area around it. Blanxart will not tell us who the supplier of the beans is. Since they buy mostly themselves, we have a very strong suspicion, that it is CACAONICA , a cooperative from Waslala that was founded in 2000 and now has some 280 members in 40 communities (villages). On Oct. 16, 2017, Mikkel Fris Holm won gold medals for his chocolate at the International Chocolate Awards in London. This was proudly mentioned in the Nicaraguan press/radio and en passant also that Blanxart buys the same cocoa.
Taste notes: intense floral notes accompanied by citrus and fruity accents (orange, lemon, pineapple) and further balanced by nutty and grassy notes.
