The Blanxart Negro Filipinas 71% finds its roots in the Philippine province of Davao Oriental on the South-Western island of Mindanao. In the municipality of San Isidro several farmers work together with the cultivation of the cocoa beans that are processed into the chocolate of the Negro Filipinas 71%. The San Isidro Coöperatie has been making a positive contribution to the success and growth of the individual members of the partnership for years.
The beans that are grown and hand-selected for this bar are from the Trinitario cocoa variety, which is a cross between Criollo and Forastero cocoa. The Trinitario has about the same strong taste profile as the Criollo, but is more robust, which is another feature of the Forastero. This combination of special features gives this bar an authentic, burned character. The notes of roasted hazelnuts and wood give you the special feeling of sitting with family by the fire.
