The cocoa beans are grown on small plantations in Chulucanas: a small town in the coastal region of Piura in the North-West of Peru. For this chocolate Blanxart has used hand-selected beans of the white Criollo cocoa variety. The Criollo cocoa bean is the oldest known cocoa variety and stands out with its astringent taste and subtle bitterness. The taste of the chocolate contains rustic, woody tones, reminiscent of coffee and liquorice, although there is also a lime-like tint.
